Ingredients

200g dark chocolate

3/4 c coconut sugar

1/2 c Nutiva coconut oil

4 medium eggs

1 tsp vanilla extract

1 tbsp Om Mushroom Chaga

1/3 c almond flour

2 tbsp coconut flour

1 tbsp extra dark cocoa powder *

1/4 tsp salt

 

Chocolate Frosting

1 c coconut yogurt * 

1/4 c coconut sugar

1 tbsp cocoa powder

1 tbsp Om Mushroom Chaga

1/2 tsp vanilla extract

Method

1. Preheat the oven to 180°C/ 350°F (fan) grease an 8-inch square baking pan and line with parchment paper. 

2. In a double boiler, melt the dark chocolate and coconut oil. Remove from heat and set aside. 

3.In a large bowl, beat eggs and sugar with an electric whisk for 10 minutes until thick.

4. Add the chocolate mixture and vanilla extract and whisk until combined. Sift in the dry ingredients gently fold until just combined. 

5. Pour into the baking pan and spread evenly.

6. Bake for 20-25 minutes until a metal skewer comes out clean. 

7. While that’s baking, whisk the chocolate frosting ingredients in a bowl until smooth and set aside. Once the brownie has cooled completely, top with the frosting. Option to decorate with extra cocoa powder and rose petals.

* Or normal cocoa/ cacao powder, i used it more for the dark rich colour.

* I recommend using a coconut yogurt that isn’t too tangy, alternatively you can use coconut cream.
