This amazing protein packed, blood sugar balancing mushroom soup will keep your taste buds and your waistline happy.

Maitake is an amazing medicinal mushroom which can help balance blood sugar levels, so it’s great for those with blood sugar imbalances, sugar cravings or just watching your waistline.

Serves: 4

Ingredients:

1 Tbsp Maitake mushroom powder

200ml Oat cream

3-4 crushed cloves of garlic

1 Large sprig of thyme

2 Tbsp pea protein powder (can be substituted with rice or hemp protein)

3-4 Medium diced carrots

1 Large diced onion

200g Chestnut mushrooms

Vegetable stock

Directions:

Pan fry the onions, garlic and thyme to release their flavours, then add the diced chestnut mushrooms and carrots. Once cooked, add 3 cups of water to the mix with vegetable stock.

Throw the mix in a blender to puree with the rest of the ingredients and add salt and pepper to taste.
