The moment has come. It is time to get busy in the kitchen for the Christmas dinner. Today we are coming to you with a delectable superfood stuffing that will surely impress your guests.This is an upgraded digestion-boosting version of your traditional Christmas stuffing. Soak 100 gr of dates in boiling water. Fry 2 onions in Nutiva coconut oil until translucent and place them in a bowl with 200 gr of breadcrumbs. Chop up the dates along with 100 gr of macadamia nuts and add to the mixture. Stir in 1 sage bunch, 100gr of Organic Traditions goji berries, 1 tbsp of flaxseed, 1 tbps of Nutiva hemp seeds and 1 tsbp of pumpkin seeds. Season with salt and pepper and finally add 1 large egg. Mix it well and pop it in the oven for about 30 minutes. With this stuffing, your Christmas feast will be one to remember !  

 

This is the recipe for a vegan Wellington

Want to take your traditional Wellington to the next level ?  This recipe is packed with colorful and nutritious fruits and vegetables such as butternut squash, spinach and goji berries and will serve 6 people. I suggest buying the puff pastry to save yourself some time but for the pastry chefs out there, by all means, make your own puff pastry. 

 Let's focus on the stuffing for now. Get the oven ready by heating it up to 200° C, peel the solid parts of one butternut squash and cut it in half lengthwise. Brush the two halves with a bit of Organic Traditions Raw Ice processed olive oil on both sides and bake in oven on a piece of baking paper for about 30 minutes until almost cooked. Then take the halves out of the oven and let them cool down.

 In a pan, fry 1 finely diced onion in Organic Traditions Raw processed olive oil on medium heat until caramelized. Add approximately 6 cloves of chopped garlic and stir-fry until soft. Add 15 gr chopped sage and 1 spring of chopped rosemary leaves. Stir-fry for another minute. Add in 250 gr chopped spinach, 1/4 cup Organic Traditions Goji berries, 10 black olives and ½ cup of chopped pecans.  To add a bit of magic to your recipe, stir in 1 tspb of OM Mushroom Reishi powder.  Reishi is a natural adaptogen that helps balance mental and physical stress and helps soothe an overactive immune system. Season with Himalayan salt, black pepper and some chilli flakes. Once the spinach has wilted, allow all the water to cook out. Let it cool off then add in ½ cup breadcrumbs to soak up any excess moisture.

 Unroll the pastry sheet and place your filling in the middle. To avoid the bottom from getting soggy, sprinkle the rest of the breadcrumbs over the pastry. Then pile the spinach filling over the breadcrumbs into a rectangular parcel. Place the two halves of the butternut squash on top of the parcel. Make tiny incisions everywhere on the pastry, fold both end flaps up, brush the pastry with Nutiva Coconut Oil and almond milk and bake for 50 minutes golden.
